  Medical/Scientific Illustration - seriously, I don't know why I haven't thought of this sooner. I'm quite annoyed that in all of these years of being interested in science AND art I've only just thought of this.
I know a decent amount about anatomy and physiology, but I chose to do Genetics instead of Physiology at A level for my Biology option module. I'd actually really like to do a Physiology and Anatomy course, probably a home one so it doesn't conflict too much with my Graphic Arts course at University, and it would be more likely that I can start the course whenever rather than in Septembers like regular A level courses.

Sorry about my science waffle, it's just that I'm kind of excited about this as an actual potential career path for me ^-^
Of course I need to do some more research, but I think the idea might have potential :3
